Retreat Favorites: Chickpea Salad

Chickpea Salad
as prepared by Regina Irvin

  • 2 cans garbanzo beans drained and rinsed
  • 1 cup of chopped red onion
  • 1 cup of chopped green pepper
  • 3 TBS of olive oil
  • 3 TBS of balsamic vinegar
  • Salt and pepper to taste

Mix together and enjoy.
